With or Without Cheese, By: Christine Hickey

It was probably first formed by accident
Now sliced, diced, lumpy or smooth
Name your favorite, Limburger anyone
Or the source, goat, cow, camel or moose
Be it strained, drained, dried or molded
Keep it cold, but heat it up as
Fondue, grilled, baked or pizza
Found almost everywhere, like
England, Ireland, Scandinavia
France, Italy and even Wisconsin
In blue, green, yellow or white
On Roquefort, on Stilton, on Gouda
With Camembert, cover the world
Brie to the moon, safe and sound
No ratz……
